Strawberry Bread Recipe

I got this recipe out of The American Country Inn and Bed & Breakfast Cookbook vol. 2.

Strawberry Bread
1/2 C. butter
1 C sugar
1/2 tsp. almond extract
2 eggs, separated
1 C crushed strawberries
2 C all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt

Spray a 9"x5" pan with cooking spray. In a large bowl, cream together the butter, sugar, and almond extract. Beat in egg yolks. Add strawberries and blend well.

In a separate bowl, sift together flour, baking powder, baking soda, and salt. Set aside.

Beat egg whites until stiff and fold into strawberry mixture alternately with the flour mixture. Turn the batter into the pan. Bake at 350 degrees for 50-60 minutes. Cool for 15 minutes on a rack. Makes 1 loaf.
